I agree with the shifty wind statement and that is ultimately why I sold mine. It's a fun tricky kite in the smoother stuff but gets upset easier than others in the shifty winds I normally fly in. The Seven is hardly the only kite that is like that, I have parted with many that exhibit similar behavior. This does seem to be directly related to how much a kite over steers.
The Saber II does much better in my winds but doesn't sit back in a Turtle like the Seven will. It's quite different in the way it feels and tricks. If I had to pick between the two, I'd take the Saber II. Mainly because it works in my wind better. If I lived on the coast or flatter land, the choice would be tougher.
THats the statements that stop me from getting a Seven. Several people have said it doesn't like inland winds much but that doesn't mean you can't learn to fly it in them or mod a bit to help but I have kites that don't mind shifty winds already. AS for your Saber 2 Dolphin try moving the weight just above the velcro. I have and its a lot more turtle friendly but still rolls up just as fast.
