Wow, that diminishes anyone's work!
Have you any idea of how much work that video has in it?
It is absolutely daunting!  Shocked
The production of this video has needed such a huge amount of money and time...

There are layers and layers of overlapped video with frame by frame cutting of the surfer and the kite to make the overlap work. Obviously post-production software has powerful template utilities to do that nowadays, but it is still largely a manual process that takes hours of tedious work.

So thanks Sam for showing this marvel, but... thanks Sam  Angry for making our pictures look like toys next to this...

Ah, OK.
This was done by visioning frame by frame a video that my wife recorded (with a Samsung S3 in full HD1080i video).
I chose the best steps of the sequence of a semi-Axel and captured each image in a separate PNG file (with the Videolan VLC video player: http://www.videolan.org/).
I then made them match in position with Photoshop (since my wife sometimes records as if she were playing maracas...).
Specifically I made sure the monument to the right of me was always coincident. It is much easier when you record with a tripod since you can skip this step...  Angry
Then I started to cut each kite image from their background such that I had them isolated.
Finally I overlapped all the kite images over the background of the first step (this is why I am looking at the lower right kite image).
I corrected brightness, contrast, saturation and voilą!
After 3 or 4 hours of work you get the image.  Wink
